We just loved this soup for dinner the other night. It didn't make the best left overs, but served fresh it's wonderful. It is also very easy to make. Here is the recipe.
2 cans diced tomatoes in juice
2 cans tomato sauce
2 cans of water
1 lb ground beef or ground turkey
1 packet of spaghetti sauce seasoning mix
4 large bay leaves
2 teaspoons chicken soup base
1 medium chopped onion
1 large chopped green pepper
1 small can of mushroom stems and pieces
16 oz bag of mini lasagna noodles or corkscrew pasta
2 cups shredded mozerella
Brown ground beef and drain. In a large soup pot combine beef, tomato sauce, diced tomatoes, water, onion, green pepper, mushrooms, seasoning packet, soup base, and bay leaves. Cover and bring to a simmer on medium heat. When soup is boiling add pasta, stir, and cover. Cook 12 minutes or until pasta is al dente. Remove from heat and serve. Sprinkle with the shredded cheese.
