Easy Feel Good Food

Cure For a Bad Day!!!

Having a bad day??? Wanna hurt someone??? Wanna crawl back in bed and feel sorry for yourself??? I've got a cure for you. Don't have a pity party, make a great meal. Nothing cures the feelbads like serving others, and as a stay at home mom, there is no other logical service than serving you family, and what better way to serve them by feeding them something great. So get out of bed, put down the gun LOL, turn on some tunes and get out the apron. To get you started here is a super easy menu for dinner for 5.

Meatballs in a cream sauce over noodles
Spinach salad with dressing of choice
Dinner Rolls with butter
Honey Bun Cake

Easy Meatballs in a Cream Sauce
1 can cream of celery soup
1 can French onion soup
8oz. Sour cream
3 lbs. frozen meatballs, or make own meatballs from scratch and bake them
1 package egg noodles
¼ cup butter

In a large slow cooker combine both soups, and sour cream. Stir in meatballs. Cook on high heat for 3 hours. Cook egg noodles, drain, toss butter with pasta. Serve meatballs and sauce over noodles.

Honey Bun Cake
1 (18.25 ounce) package yellow cake mix
3/4 cup vegetable oil
4 eggs
1 (8 ounce) container sour cream
1 cup brown sugar
1 tablespoon ground cinnamon
2 cups confectioners' sugar
4 tablespoons milk
1 tablespoon vanilla extract

Preheat oven to 325 degrees F (165 degrees C). In a large mixing bowl, combine cake mix, oil, eggs and sour cream. Stir by hand approximately 50 strokes, or until most large lumps are gone. Pour half of the batter into an ungreased bunt cake pan. Combine the brown sugar and cinnamon, and sprinkle over the batter in the cake pan. Spoon the other half of the batter into the cake pan, covering the brown sugar and cinnamon. Using a butter knife, cut through the batter gently to create a slight swirl with the sugar. Bake in preheated oven for 40-50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove from pan. Frost cake while it is still fairly hot. Best if you serve warm.
To Make the frosting: In a small bowl, whisk together the confectioner's sugar, milk and vanilla until smooth Buy a bag of spinach and a bottle of dressing. You can buy some nice dinner rolls or if you are extra ambtious make your own from scratch.
