Birthday Brunch Recipe

Had a wonderful birthday brunch for my Aunt DeDe the other day. On the menu was a wonderful casserole, cranberry white chocolate scones, pumkin bread, apples, and champagne. Below is the recipe for a great casserole.


1 bag frozen hasbrowns

8 eggs

1 cup milk

1 diced green pepper

1 small diced onion

2 cups fresh sliced mushroom

1 tomato, diced

1 cup diced ham (or you could substitute with sausage or bacon crumbles)

2 cups shredded cheddar cheese

1 tsp garlic powder

1/2 tsp salt

1/4 tsp black pepper

Pour hashbrowns into a greased 13x9 casserole dish. In a bowl whisk together eggs milk and seasonings. Pour over hashbrowns. Top with all the meat and veggies, lightly mix them in. Bake in oven at 350 degrees for 30 minutes or until egg is firm. Remove from oven and top with cheese, bake an additionsl 10 minutes to melt cheese. Top with diced tomato. Tastes great served with sour cream or ranch dressing.

The above picture is different that the recipe because I didn't have all my ingredients in the house and didn't want to run to the store in this crazy cold weather.
