Oh Yum!! and so much fun to make your own granola. The kids had a blast and it was really very tastey, and there is the added appeal of knowing exactly what is in the food you are eating. I love knowing every ingredient I am consuming, and knowing it is full of good wholesome foods that are just what we need.
Peanut Butter Granola
2 tablespoons butter
1/3 cup of natural peanut butter
1/3 cup of honey
1/2 tsp vanilla
1/4 tsp salt
3 cups rolled oats
1. melt the butter and peanut butter together in a 3 quart saucepan, add vanilla, salt, and honey. Stir this mixture untill it is hot and smooth in texture, it does not need to boil.
2. Add the oats, and stir untill they are completely covered in the peanut butter mixture, it will be chunky.
3. Spread the mixture onto a cookie sheet and bake at 375 for 10 minutes. Take out of oven and let cool, it will be very brown and crispy. Break it up and store in a container.
