A nice warm bowl of butternut squash soup, homemade dinner rolls, and the family around the table, you can't beat that.
You Will Need:
1 medium butternut squash...peeled and cut into chunks
1 small onion diced
1 red bell peper cored cleaned and diced
3 carrots, peeled and diced
2sticks of celery, chopped up
2 cans of chicken broth
1tsp garlic powder
1 tsp salt
1 tsp white pepper
1/2 tsp nutmeg (for a little kick)
1 cup heavy cream
Put all of your veggies and squash into a large stock pot, add chicken broth. Bring to a boil and then simmer over medium heat untill all of your veggies are very tender. Add your seasonings, mix well. Pour all of the mixture into a blender or food processer and puree until very creamy and smooth. You will probably have to do this in batches unless you have a monster sized blender!! Add cream to pureed mixture and heat on medium/low heat until soup is hot. Serve and enjoy.
Optional: You can add about 2 cups of scallops to your veggies when you are cooking them, when pureed with your soup they add a lovely richness, plus protien. You could even add shredded chicken to it after it cooked for texture and protien.
