Fast & Easy Chicken n' Dumplings

Dinner in a pinch? Every busy mom needs an arsenal of quick and easy recipes that require little to no preperation and easy cooking methods. I have such and arsenal, and would like to share one of our favorite family quick picks with you.

You Will Need:

1.5 pounds of boneless skinless chicken breasts
1/2 a bag of obrian potatoes
1 small bag of frozen mixed veggies
1 famly size can of cream of chcken soup
1 small can of chicken broth
1 small onion
1 clove garlic
2 tbl cooking oil
1 can refrigerated biscuits

PREP: dice onion, crush and dice garlic, cut chicken breasts into small chunks, open cans, and cut up each biscuit into fourths.

COOK: heat oil in a large stock pot or (my preference) a deep skillet, over medium heat. When oil is hot add garlic and onion, saute for a few minutes and then add potatoes. Saute untill potatoes start to brown and then add chicken. When chicken is cooked through add veggies broth, and cream soup. Bring to a simmer and place biscuits into pan. Now cover and let cook. DO NOT open the lid, DO NOT stir, you must leave it alone now and let cook for 30 minutes. If you mess with it your dumplings will fall and be super gross. After 30 minutes check dumplings, if they are cooked all the way through then they are done. Serve and enjoy.
