Best Banana Bread I've Made!!!


I've made allot of banana bread, but there is always something not so right. Finally after many recipes I've found one I really like...moist, stays moist, just wonderful.


3/4 cup butter softened
8oz cream cheese, softened
2 cups sugar
3 med. ripe bananas
2 eggs
1tsp vanilla
3 cups flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 cup walnuts or pecans

Cream together butter, cream cheese, and sugar....just beat it till its super fluffy and smooth. Add eggs one at a time beating well after each. Add bananas and vanilla. Add dry ingredients and mix until just combined. DO NOT over mix, just combine. Overmixing is the cause of dry crumbly breads, cakes, and muffins. stir in nuts.
Spray 2 bread pans with non stick spray and pour in batter and bake on a cookie sheet in middle rack of oven 350 degrees for 1 hour 15 minutes.
