Big Beef and Bean Burrito
Last week we made a giant beef and bean burrito for dinner...it was good, so I figured I'd go ahead and share it with you.
You Will Need:
Large flour tortillas - the bigger the better
2 cups of shredded cheddar cheese
1 jar of salsa
1 pound ground beef
2 cup of rice - cooked according to directions
1 can of refried beans
lettuce, tomato, sour cream, etc...for the side
Brown hamburger and drain, then add salsa and mix well.
Spray bottom of 13x9 inch baking pan with nonstick cooking spray...and then line with tortillas. You want to put a couple of tortillas on the bottom and then along the side so that they go up the sides of the pan, you will fold them over the top later.
Next spread the beans on the tortillas, top with rice, cheese, and then ground beef mixture. Fold the tortillas over the top of the stuffing's, using more tortillas if necessary.
Cover with foil and bake for 30 minutes at 400 degrees. Serve with lettuce, tomato, sour cream, and anything else you like on the side.
