Happy Stirfry and rice box


2  very nice looking lunches for school today......and 2 happy kids.
Today's Lunch: Chicken ramen stirfry, rice, peaches, cupcake, & V8


Sending lunch out the door can get pretty boring. My kids are homeschooling now, but when they were in public I made it a point to break out of the typical sack lunch syndrome and send more interesting meals. Even now with them home, I will make up meals like this ahead of time and put them in the fridge so the next day when lunchtime rolls around and I'm busy with the twins they can grab lunch, heat it up, and eat without waiting around for me to "have time".



EASY CHICKEN & RAMEN STIRFRY

1 boneless skinless chicken breast, sliced thin
1 package ramen noodles, any flavor
1 cup of water
2 cups of frozen stirfry blend veggies
2 cups of cooked rice
oil
soy sauce
seasonings

Cook rice and mix with some soy sauce, put in container. I put my rice and sides in a compartment container, and the stirfry in a thermal container so it would stay hot.

In a saute pan heat up a little bit of oil (2 tbsp) over medium high heat. Add chicken and cook until almost cooked through, add veggies and seasonings to taste (salt, pepper, garlic powder, onion powder).

In a small pot, bring 1 cup of water to a boil and add ramen noodles with the seasoning packet, cook until noodles are soft but not cooked all the way through, set aside.

When veggies are tender add ramen noodles to stirfry and cook for 1 more minute. add a splash of soy sauce, and put into your container.
