Thanksgiving Leftovers #2

Turkey Pot Pie (fast & easy)

This was absolutely yummy, super fast and easy as well. It's no gourmet recipe, but for the busy mom it's perfect.

You need:
Left over turkey meat (about 4 cup) cubed
1 family size can of cream of chicken soup
1/2 cup milk
1tsp garlic powder
1/2 tsp black pepper
1 package of frozen mixed veggies
3 cups of all purpose baking mix like Bisquick (I made my own)
2 eggs
2 cups water

In a large bowl wisk together milk, seasonings, and soup. Fold in turkey and veggies. Pour mixture into a lightly greased 13x9 baking dish.

In a large bowl combine baking mix, eggs, and water, mix well and pour over turkey mixture. 

Bake at 400 degrees for 35-40 minutes or untill the crust is golden and crunchy and the turkey mixture is hot and bubbly.
