Oh yum...this was pretty darn good, thought I'd share it.
2 cups rice cooked according to directions
1 packet of vegetable dip seasoning mix
1 can of cream of chicken soup - family size
4-5 boneless skinless chicken breasts
1 medium onion... diced
1 can of corn - drained
2 cups shredded cheddar cheese (sharp is what I used)
I just mixed it all together in the crock-pot and cooked it on low for 6 hours. It was great.
